anyway, some more tips, suggestions and variations for a crisp and golden coloured goli baje recipe. firstly, i would like to emphasis on the use of maida or plain flour for this recipe. you may not get the same texture, shape and also that softness if you use atta or any other flour. secondly, while deep frying these, ensure to dip your finger in cold water before grabbing the dough. this would help the dough to release and slip through your fingers and form a round shape when dropped to oil. lastly, ensure to drop this in a good height and do not take the fingers too close to the oil. moreover always deep fry these in small batches and do not overcrowd them.

  • cup maida / plain flour
  • ¼ tsp baking soda
  • pinch hing / asafoetida
  • ¾ tsp salt
  • 1 cup buttermilk
  • 2 tbsp curry leaves, finely chopped
  • 2 chilli, finely chopped
  • 1 inch ginger, finely chopped
  • 2 tbsp coconut, chopped
  • oil, for frying

Instructions

  • firstly, in a large bowl take 1½ cup maida, ¼ tsp baking soda, pinch hing and¾ tsp salt.

  • mix well making sure everything is well combined.

  • now add1 cup buttermilk. you can alternatively use curd.

  • mix well with your hand in one direction.

  • beat the batter making sure to incorporate air well.

  • now add2 tbsp curry leaves, 2 chilli, 1 inch ginger and2 tbsp coconut.

  • mix well making sure everything is well combined.

  • cover and rest for 3 hours for best results.

  • after 3 hours, mix the batter again.

  • now dip your hand in cold water and pinch a small ball sized batter.

  • drop it in hot oil keeping the flame on medium.

  • stir and fry uniformly on medium flame.

  • drain off the goli baje once it turns golden brown and crisp.

  • finally, goli baje is ready to enjoy with coconut chutney.
