The Best Pancake Recipe – This tasty pancake recipe is easy and has a secret ingredient that gives them the perfect fluffy pancake consistency.

The Best Pancake Recipe - The Wholesome Dish (1)

My whole family loves this pancake recipe. This has become my go-to when we want pancakes for breakfast on the weekends.

What’s the secret ingredient that makes these pancakes the best? Sour cream. It may sound strange but it really works!

These sour cream pancakes have a butter crisp outside and the inside is so soft it’s almost creamy. To balance the flavor of the sour cream, I added more sugar. So these are actually sweeter pancakes than most. So good!

The pancake batter is made in one bowl, making this pancake recipe easy!

Ingredients

  • 1 cup milk
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Butter for greasing the pan -about 3 tablespoons
  • Maple syrup for serving

Instructions

  • In a large bowl, add the milk, sour cream, sugar, eggs, and vanilla. Whisk until combined. It’s ok to have small lumps of sour cream.

  • Add the flour, baking powder, and salt. Stir just until no large clumps of dry flour remain, trying not to over mix. The batter should be very lumpy.

  • Melt about ½ tablespoon of butter in a large non-stick skillet over medium-low heat until lightly bubbling and light brown.

  • Ladle the batter into the skillet making 3-4 pancakes (about ¼ cup of batter each). Cook 3-4 minutes, until bubbles form on top of each pancake and the bottoms are golden brown.

  • Flip the pancakes. Cook 1-2 minutes, until the bottoms are golden brown.

  • Carefully wipe out any excess browned butter with paper towels. Repeat with the remaining butter and pancake batter.

  • Serve warm with maple syrup.

Through out the bisquick and instant pancake mix!
There is a better pancake recipe out there put out by King Arthur Flour but it’s time consuming and labor intensive.
If you’re looking for a quick excellent pancake batter in both taste and texture this is it.
So good I had to write a review before finishing my breakfast.

I just made these pancakes and all I can say is OMG! I have made different kinds of pancakes BUT these are the most delicious ones I have ever eaten. I believe the sour cream is the key to their flavor. I am so glad I spotted this recipe and decided to try it. I will be making them from now on. Thank you for posting this recipe on Pinterest.

My granddaughter & I tried numerous pancake recipes & this is definitely our favorite. She requests it quite often while spending time with us. I was out of sour cream so I substituted it with yogurt & they were just as good. Thank you for sharing this wonderful recipe.

When they say this recipe is foolproof they are not kidding! The man I am seeing got called into work on a Saturday leaving his kids home alone. I made due with what was in the house which meant instead of milk I used half and half and light coconut milk and instead of sour cream I used no fat Greek yogurt. Voted by all 3 kids to be the best pancakes they have ever had!

I’ve been trying out various pancake recipes every time I get a request for them from my boys. This one was the winner by a unanimous vote. I think the sour cream adds so much to the flavor, and the texture is perfect. Light but fluffy, and full of flavor. This is going to be my go-to pancake batter.
    Thank you for sharing it!

FAQs

Why do restaurant pancakes taste better than homemade? ›

Restaurants use better quality ingredients

Restaurants tend to use real, farm-fresh eggs and real milk when making their pancakes, which as you might guess, adds to a richer, higher-quality eating experience.

What makes pancakes fluffy and helps them rise? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

What makes fluffier pancakes milk or water? ›

Milk helps make pancakes fluffier than water. Since milk is thicker than water, it creates a thicker batter. Further, if you use whole milk or low fat milk, the fat content helps yield tender, fluffy results.

Does milk instead of water make pancakes better? ›

1. Use Milk/ Alternative Milk Instead Of Water. Even though the mix may call for water, you can easily substitute that for an alternative milk (I like oat milk). You may have to add a dash more due to the difference in consistency, but it'll taste so much better!

What is the no pancake rule? ›

The Pancake Rule eliminates baked goods, foods-with-no-brakes, and treats, even if they're made with technically compatible ingredients. Remember, the program isn't just about identifying food sensitivities.

What ingredient keeps pancakes from falling apart? ›

I can barely flip a pancake without it falling apart on me.

Your batter could be too loose—add a little flour.

Why do IHOP pancakes taste so good? ›

Not to be outdone, IHOP shares that real buttermilk is a key ingredient in its classic pancakes. Classic, whole ingredients are usually the best starting place for better hotcakes, but it's more and more common to see cheaper fillers like cornstarch and the use of shortening instead of butter.

Why is the first pancake no good? ›

The first pancake is in effect the trial run, working out the kinks before all the variables of even heat and pan seasoning come together. While that first pancake cooks the pan comes to temperature, and it absorbs just enough of the fat on the cooking surface so that second one will cook more evenly.

What is the secret to fluffy pancakes? ›

The secret is in the egg whites!

Yep, egg whites are THE determining factor here. To give your pancakes that fluffy text, beat only the egg whites for 3 minutes on medium speed. They'll start turning creamy, which means it's time to add them to the pancake mixture.

Can I use mayo instead of eggs in pancakes? ›

Note that mayonnaise contains eggs and oil, so it can replace oil or butter as well. This trick may not work as an egg replacement for an allergy or egg-free diet (unless it's a vegan mayo) but it works for those who don't have eggs on hand in a pinch.

Does adding more baking powder make pancakes fluffier? ›

Baking powder (double acting) provides two rises: The first occurs when the baking powder comes into contact with a liquid, the second when it's exposed to heat. Too much baking powder will create a very puffy pancake with a chalky taste, while too little will make it flat and limp.

What is the secret to light fluffy pancakes? ›

The secret is in the egg whites!

To give your pancakes that fluffy text, beat only the egg whites for 3 minutes on medium speed. They'll start turning creamy, which means it's time to add them to the pancake mixture. Use a wooden spatula to incorporate everything. There you have it!
