Cookie lovers, listen up! I know cookies are the best, but have you tried biscotti cookies? They’re quite similar to what you’re used to, but they’re double baked and extra crunchy. You know what this means… they’re perfect for dipping!

To ease you into the world of making your own biscottis we’re starting things off with a delicious healthy biscotti recipe. These cookies are made with delicious ingredients and are coated in melted chocolate… because obviously.

Biscottis vs Scones… what’s the difference? The truth is, they’re actually pretty similar! So if you’ve had a scone, you’ll know what to expect with these biscottis… sort of. The main difference is that scones are more of a bread, where biscottis are classified as a cookie or pastry.

But considering you can add chocolate and other yummy flavors to scones as well, it’s safe to say that they’re pretty darn similar! Either way, this is the best biscotti recipe, and I know you’re going to love it. Let’s get started!

Ingredients in healthy biscottis

Biscottis are made with cookie-style ingredients like flour, oil, sugar, and eggs. We’ll also add in vanilla and almond extract for extra rich flavor.

  • Flour: Start with 2 cups of white whole wheat flour. This will be the base of the biscottis.
  • Baking powder: Next, include 1 tsp of baking powder to help them achieve the proper consistency.
  • Salt: Add 1/2 tsp of salt for flavor. Salty and sweet is the best!
  • Coconut oil: Include 1/4 cup of softened coconut oil.
  • Coconut sugar: And for sweetness, throw in 3/4 cups of coconut sugar!
  • Eggs: 3 eggs will help the ingredients mix together properly while also contributing to the consistency.
  • Vanilla: Add 1 tsp of vanilla for the rich cookie flavor that we all love.
  • Almond extract: And 1/2 tsp of almond extract for a little extra something something.
  • Chocolate chips: Set aside 1 cup of chocolate chips to use for dipping.
  • Coconut oil: Finally, mix 1 tsp of coconut oil with the chocolate chips to create the correct chocolatey texture.

How to make this low sugar biscotti recipe

Biscottis are made quite similarly to regular cookies. We’ll start by mixing everything (separate bowls for wet and dry ingredients, as always) and shaping the dough, followed by baking. Let cook, slice, cook again, cool, and then dip into the chocolate! Just like that, your regular cookies have been upgraded to delicious, dippable biscottis.

To begin, preheat the oven to 350F and line a baking sheet with parchment paper.

Mix the flour, baking powder, and salt in a medium bowl.

Then in a large bowl, cream together the oil, coconut sugar, eggs, vanilla, and almond extract.

Add the dry ingredients to the wet and stir until everything is well combined.

Cut the dough in half and form/flatten it into two logs, approximately 4 inches by 8 inches. They will look like flatter loaves of bread. If it is sticky, coat your hands in flour to work with it.

Bake for 25 minutes, then let cool for 10 minutes before slicing into pieces.

Turn the slices to lay flat and bake for another 10 minutes.

Let cool and harden. While cooling, melt the chocolate chips with the oil in 30 second increments.

Dip the bottom of the biscotti in the melted chocolate, and then place on the cooked baking sheet chocolate side up to harden.

Once all of the biscottis have been dipped, let cool and harden on the counter or in the refrigerator.

For this recipe I kept things simple. I skipped the white sugar in favor of coconut sugar, ditched the vegetable oil for coconut oil, and used while wheat flour in place of all-purpose! These three swaps are incredibly simple and together make these biscottis that much better.

Storing leftovers

Biscottis can be kept on the counter at room temperature. Just keep them in a sealed container, and they’ll be fresh and yummy for about 3-4 days to come!
