2 TbspOlive oil
1 smallOrange kumara, thinly sliced
1Red pepper, sliced
2 smallCapsic*ms, yellow or orange "sweetie" variety, sliced
1Zucchini, sliced
1Small red onion, sliced
200 gFood Snob Cypriot Halloumi (Main)
1 bowlSalad greens
4Burger buns, toasted
1 drizzleHummus, alternately use mayonnaise or sweet chilli sauce; enough for 4 burgers

Directions

  1. Heat the oil in a frying pan and cook the vegetables in a batch until tender and just coloured.
  2. Wipe the pan clean and slice the halloumi thickly, pat each slice dry on paper towels.
  3. Spray or lightly brush the pan with oil and fry the slices until golden and softened.
  4. Layer each burger with hummus, greens, seared vegetables and halloumi then drizzle with sweet chilli sauce.
